Though often confused, cacao and chocolate refer to two distinct products derived from the same fruit but at different stages of processing. Cacao is the purest form, made by grinding fermented and dried beans.
It is available as unsweetened powder, without additives, and is particularly valued for its nutritional benefits. Chocolate, on the other hand, is a processed product that includes sugar, milk, and other ingredients.

Natural vs. Alkalised Cacao
Another key factor is the difference between natural and alkalised cacao. Natural cacao is pure and unprocessed, retaining all its nutritional properties. It has a lighter colour and a more acidic taste. In contrast, alkalised cacao (also known as “Dutch processed”) is treated to reduce its acidity, resulting in a darker colour but with fewer nutrients and health benefits. This is why our natural cacao powder appears lighter and less intense compared to many commercial powders.

As stated on our packaging, a “Tree to Cup” cacao blend means that every step of production is monitored, from the cultivation of cacao trees to the final cup. This model prioritises traceability and quality control at each stage: harvesting, fermenting, drying, processing, and distribution. We embrace this approach through our partner, WAT Chocolate (a chocolate maker based in Siem Reap, Cambodia), to offer ethical and premium-quality cacao, ensuring that each step is performed in an eco-responsible and fair manner.
WHAT MAKES CAMBODIAN CACAO UNIQUE?
Cambodian cacao, particularly from the Mondulkiri region, is known for its exceptional quality. This cacao comes from a hybrid variety of Forastero and Trinitario, known as Bunong cacao, which is organically grown by local communities sharing the same name.
Mondulkiri cacao, cultivated in a mild tropical climate, produces beans with a rich flavour profile, featuring large pods that develop complex and deep tastes after fermentation.
Thanks to fertile soil and organic farming practices, this cacao grows in ideal conditions. The result is an authentic, rich, and intense cacao, showcasing the unique flavours of Mondulkiri’s terroir.
HOW DO SPICES ENHANCE CACAO?
Cacao and spices are a perfect pairing, especially in warming autumn and winter drinks. Spices add unique layers of flavour, creating a harmonious balance between cacao’s round notes and the warmth of spices.
