Cambodian Paprika from La Plantation is created through a meticulous process, honouring local traditions and preserving the freshness and authenticity of sweet long peppers. These peppers are carefully cultivated on our plantation in Cambodia, benefiting from the exceptional terroir of the Kampot region. We prioritise responsible farming practices, free from pesticides and harmful chemicals, ensuring superior quality products. The peppers are harvested at their peak ripeness, guaranteeing a maximum concentration of aromas and flavours in each fruit. This crucial step contributes to the unique gustatory complexity of our Cambodian paprika.

The peppers are then delicately laid out under the sun for 4 to 5 days, a natural drying process that preserves the organoleptic qualities of the peppers. This sun drying imparts a characteristic intensity of flavour and depth of colour to Cambodian paprika. Once dried, the peppers are meticulously cleaned to remove any impurities. They are then stripped of their stems and seeds, preserving only the flavour-rich pulp.

The final production stage involves finely grinding the delicately dried peppers into a fine powder. This process is performed with precision to achieve a homogeneous texture, ensuring an even distribution of taste and colour in each grain of Cambodian paprika.

Once ground, the peppers are immediately packed into airtight containers. This method captures the freshness and integrity of the aromas, preserving the exceptional quality of Cambodian paprika until it reaches your kitchen.
