										Flour 200g

										Eggs 4

										Softened butter 200g 
- 
										Baking powder 10g

										Palm Blossom sugar 180g 
- 
										Walnuts 100g 
- 
										Almonds 100g 
- 
										Sultanas 100g 
- 
										Chai Mix 2 tsp 
- 
										Amaretto 2 tsp

- 
										Icing Sugar 10 tbsp 
- 
										Water 2 tbsp 
- 
										Amaretto 1 tbsp 
 
			
			Heat the oven to 200°C.
In the bowl of a stand mixer, soften the butter. Add the Palm Blossom Sugar. Add the eggs, Amaretto and a pinch of salt and mix until smooth.
Add the flour, baking powder and Chai Mix and mix until smooth. Stir in the walnuts and raisins.
Pour the batter into a greased tin. Bake for around 50 minutes until a fork inserted in the tin comes out clean.
Remove the cake from the oven and leave to cool before unmoulding. Prepare the amaretto glaze by mixing the ingredients until a thick, glossy texture is obtained.
