In a saucepan, combine the pitted and chopped plums, Palm Flower Sugar, lemon juice, and Wild Galangal.
Place the saucepan over medium heat. Stir occasionally and bring the mixture to a gentle simmer.
Cover and cook for about 15-20 minutes or until the plums soften and begin to break down, creating a thick compote. Adjust sweetness by adding more sugar if desired.
Once the compote reaches your desired consistency, remove it from the heat. Allow it to cool slightly before serving.
