Preheat your oven to 80°C.
Place the apricot halves in a baking dish.
In a bowl, combine the olive oil, melted honey, and cracked Black Kampot Pepper. Brush and drizzle over the apricots until well coated.
Roast in the oven for 20-30 minutes, or until the apricots are tender and slightly caramelised.
While the apricots are roasting, whip the ricotta in a blender and spread it on a plate. Top with the roasted apricots, drizzle with the remaining juices from the baking dish, and sprinkle with Khmer Green Mango powder.
