At the Épicures Awards in Paris, two passionate producers – La Plantation in Cambodia and Maison Clarance in France – decided to merge their expertise. From this bold collaboration was born the idea of reinterpreting an iconic French product with a unique twist, thanks to Cambodian spices!

The origins of our traditional Mustard range: Combining tradition and innovation

François Lorin, a farmer in Eure-et-Loir, has been cultivating his family’s fields with his brother since 1950. On the lands of Digny, François revived an almost forgotten crop: mustard. This initiative materialised through the Maison Clarance brand, dedicated to producing exceptional 100% French artisanal mustard.

 The quality of our mustards begins in the fields. François employs eco-friendly farming methods to produce mustard seeds rich in flavour and nutrients.

Each recipe is the result of meticulous manual work, striking a precise balance between these premium seeds and our flavourful spices. Crafted by hand, our mustards reflect our shared commitment to quality, authenticity, and taste.

The Artisanal Mustard-making process

Maison Clarance’s artisanal mustard begins with brown mustard seeds (Brassica juncea), cultivated using sustainable practices. This variety, celebrated for its robust and refined flavours, undergoes meticulous steps:

  • Optimal harvesting: Between July and August, when the seeds reach peak maturity.
  • Careful soaking: A balanced mix of vinegar and Sauvignon Blanc wine from Val de Loire.
  • Stone grinding: This traditional method preserves the natural aromas and ensures a smooth or coarse texture, depending on the recipe.

This process produces mustards with authentic flavours that are worlds apart from standardised industrial products.
