At the Épicures Awards in Paris, two passionate producers – La Plantation in Cambodia and Maison Clarance in France – decided to merge their expertise. From this bold collaboration was born the idea of reinterpreting an iconic French product with a unique twist, thanks to Cambodian spices!
The origins of our traditional Mustard range: Combining tradition and innovation
François Lorin, a farmer in Eure-et-Loir, has been cultivating his family’s fields with his brother since 1950. On the lands of Digny, François revived an almost forgotten crop: mustard. This initiative materialised through the Maison Clarance brand, dedicated to producing exceptional 100% French artisanal mustard.
The quality of our mustards begins in the fields. François employs eco-friendly farming methods to produce mustard seeds rich in flavour and nutrients.

Maison Clarance’s artisanal mustard begins with brown mustard seeds (Brassica juncea), cultivated using sustainable practices. This variety, celebrated for its robust and refined flavours, undergoes meticulous steps:
- Optimal harvesting: Between July and August, when the seeds reach peak maturity.
- Careful soaking: A balanced mix of vinegar and Sauvignon Blanc wine from Val de Loire.
- Stone grinding: This traditional method preserves the natural aromas and ensures a smooth or coarse texture, depending on the recipe.
