What is Fresh Kampot Pepper with Salt?
Our Fresh Kampot Pepper with Salt is our very first original creation. Harvested before it is ripe, when it is still green, at the heart of our family farm in Kampot, our pepper undergoes a salt fermentation process to preserve all its fresh, vegetal aromas. Because in Cambodia, in the Kampot region, that’s how it’s eaten, freshly picked from the vines in the gardens, and cooked straight away. For several years we have been working on and adjusting our process to bring you, all the way to Europe, the unique flavours of a green pepper that only lasts a few days, as it is a fresh plant. Since then, we’ve all become addicted to this little black pearl, which explodes on the palate and enhances so many dishes.
How to pair Salted Kampot Pepper?
We’ve come up with a few unique combinations for you to try at home, using the famous Salted Kampot Pepper. We’ve already introduced you to it in a tomato soup, and here are our 7 favourite ideas of the moment:
– Chocolate mousse with a few grains to incorporate into the preparation, and a few grains to decorate. It’s a guaranteed surprise, with an explosion of salt and pepper on the palate that goes particularly well with the bitterness of the chocolate!
– A Brie cheese cut in half and left to mature for a few days to allow the flavours to blend well.
– On a cold oyster, or even a warm one reheated in the oven for a few minutes
– On mimosa eggs, as beautiful as they are good!
– In a beef or sea bass tartare, for a touch of salt and pepper all in one!
