Cashew nuts are the edible seeds of the cashew tree, a tree native to Brazil but extensively cultivated in Cambodia for several centuries.
While often considered a nut, cashew is technically a seed. It is encased in a hard shell that requires a meticulous shelling process before consumption.
Cashew nuts are cherished for their sweet and buttery flavor, setting them apart from other nuts and seeds with their crunchy texture and exceptional nutritional profile. Unlike almonds or hazelnuts, cashews are uniquely crescent-shaped and lack a bitter skin after shelling, making them exceptionally versatile in cooking. Our Cambodian Cashew Nuts stand out due to their WW240 size grade, with up to 240 nuts per pound, signifying superior quality (compared to smaller WW500 grades with up to 500 nuts per pound). Primarily cultivated with the M23 variety, this species flowers from mid-November to February, yielding approximately 120 unshelled nuts per kilogram. Unlike other varieties, M23 is more resilient to weather conditions but requires special attention against pests due to its ability to produce multiple shoots per year.
