For the poached pears with Kaffir Lime :

Preparation of the Pears Confit with Kaffir Lime:
Peel the pears, cut them in half and remove the seeds.
In a large saucepan, add the water, sugar and Kaffir Lime Leaves. Bring to the boil.
Reduce the heat to low, add the pears to the Kaffir Lime syrup and leave to poach for around 15 to 20 minutes, or until tender.
Once the pears are candied, carefully remove them from the syrup with a skimmer and leave to cool.
You can reduce the syrup further until it thickens. Strain the leaves and set the syrup aside.
Preparing the crepes:
In a bowl, mix the flour, eggs and milk until you have a smooth crepe batter. Add the vanilla extract and mix well.
In a lightly oiled frying pan heated over medium heat, pour a small ladleful of pancake batter and spread evenly to form a thin pancake. Cook on both sides until lightly browned.
Assembly:
Serve the crepes warm with the Kaffir Lime poached pears. Drizzle a little of the syrup over the crepes.
Garnish with grated coconut and buckwheat for crunch.
