Start by preparing your shrimps. Ensure they are cleaned, peeled and deveined.
For the marinade, combine the cucumber, 2 jalapeno peppers, coriander, and lime juice in a blender or food processor. Blend until you have a smooth, green sauce.
In a large bowl, add the prepared shrimps. Pour over the green sauce, making sure all the shrimps are well coated. Marinate in the refrigerator for about 15-20 minutes. The acid in the lime juice will ‘cook’ the shrimps.
In the meantime, prepare your other ingredients. Slice your avocado, red onion, and 1 jalapeno. Set them aside.
After the marination time, arrange the shrimps on a plate or in a shallow bowl. Pour over any leftover marinade.
Arrange the avocado slices, red onion, and jalapeno around the shrimps.
Sprinkle with a pinch of Mekong Rub and garnish with fresh coriander.
