Peel and cut the oranges into thin slices. Place them delicately on a flat plate. If they are not sweet enough for your taste, sprinkle them lightly with icing sugar. Chop a few mint leaves.
Pour the cold cream with two teaspoons of orange blossom and a tablespoon of icing sugar into a food processor or electric mixer. Whip the whipped cream for a few minutes until it is light and firm. Taste and add more orange blossom if you like. Place the whipped cream in a piping bag. If you don’t have one, you can use a freezer bag and cut off one of the corners to make a piping bag.
Spread the whipped cream nicely over the orange carpaccio. Add a few chopped mint leaves, pistachios and sprinkle with a few Long Pepper Pearls.
Tip: To make a good whipped cream, put the bowl in the freezer ten minutes before use. This will allow the whipped cream to set properly.
