In a bowl, mix the Campfire Rub, Black Kampot Pepper, Kampot Fleur de Sel and olive oil to form the marinade. You can also make an alternative marinade for chicken or tofu by adding tomato paste and coconut cream.
Adjust the quantities according to how much you want to marinade. Place the ingredients of your choice (tofu, chicken or seasonal vegetables) in separate containers or resealable plastic bags. Pour the marinade over each food, making sure they are well coated. Close the containers tightly and place in the fridge. Leave the tofu to marinate for at least 30 minutes, the chicken for 1 to 2 hours or overnight.
Cook the food on the stove. Here, using the Petromax Hanging Hearth, you can also cook on your barbecue, plank, or even in the oven!
Note: If you prepare your marinade on the day or at the BBQ, prepare it 1 to 3 hours before cooking to allow the flavours to infuse. This recipe can be prepared before a cooking outing in the great outdoors or at home.
