Optional: If you prefer a smoother texture, you can soak the Smoked Cashews in hot water for about 15-20 minutes to soften, then drain.
In a blender or food processor, combine the smoked cashews, roasted sesame oil, rice vinegar, soy sauce, minced garlic, and honey.
Blend until smooth and creamy. Add water a little at a time until you reach your desired dipping sauce consistency.
Taste the sauce and adjust the seasoning to your preference, adding more soy sauce for saltiness, honey for sweetness, or rice vinegar for tanginess.
Pour into a bowl and serve as a dipping sauce.

Fill rice paper wrappers with lettuce, avocado slices, cucumber sticks, bean sprouts, and pan-fried tofu. For the tofu, slice and pan-fry in a little sesame oil with soy sauce and cornstarch until golden. Roll everything up tightly in the wrappers.
