With its distinctive taste, both spicy and slightly citrusy, ginger has become a staple in kitchens all around the world. Fresh, ground, or infused, it transforms dishes and drinks with its warm, fragrant notes.

But ginger is not only about taste. It is also valued for its digestive, antioxidant, and energising properties.

One common question is: how to consume and use ginger daily? In what form, in what quantity, and in which recipes can we make the most of it?

In this article, we will answer these questions and share some original creations from La Plantation, our family farm in Kampot where we grow ginger with care.

Few words about ginger

Ginger belongs to the Zingiberaceae family, alongside turmeric and galangal. These plants share a common story: they are all rhizomes, underground stems rich in aromas and natural compounds.

Cultivated for more than 5,000 years, ginger is one of the first spices traded on the ancient routes between Asia and Europe. Mentioned in old Chinese texts as a universal remedy, it quickly spread to the Mediterranean, where it was prized in ancient Greece for its digestive qualities.

Today, ginger is a central ingredient in cuisines worldwide. It is appreciated for both its flavour and its health benefits: it supports digestion, helps ease nausea, has anti-inflammatory properties, and is a powerful antioxidant.

How to consume dehydrated ginger?

In its dehydrated form, ginger keeps all its aromatic intensity and active compounds. Depending on your needs, you can use it as dried slices or petals, each offering different flavours and uses.

It can be added directly to your infusions, or rehydrated by soaking in hot water before using it in cooking.

Dried petals are perfect for slow infusions. They release their aromas gradually, creating rich and warming drinks.

At the start of autumn, when days become cooler and shorter, our bodies often need extra support. Ginger, known for centuries for its warming and stimulating properties, is the ideal ally for this season. A natural tonic, it supports digestion, warms the body from within, and provides gentle energy.

How to store dehydrated ginger?

One of the main advantages of dehydrated ginger is its long shelf life. It can be stored for several months — even over a year — in an airtight container, away from humidity and light.

Unlike fresh ginger, which moulds quickly in the fridge, dehydrated ginger is a practical and durable option, always ready to use.

Why choose dehydrated ginger over fresh ginger?

Fresh ginger sold in supermarkets often travels long distances before reaching Europe. During transport, it loses flavour and nutrients while generating higher costs for storage and conservation.

Dehydrating ginger immediately after harvest preserves both its aroma and active compounds at their peak. This guarantees an intense flavour and optimal benefits.

Another common issue: forgotten ginger roots at the back of the fridge that become fibrous or mouldy. That’s a direct loss.

For these reasons, dehydrated ginger is a more practical, durable, and economical choice — without compromising quality.

How to use dehydrated ginger in cooking?

Ginger infusions

One of the most popular uses is the classic ginger, lemon, and honey infusion. Perfect in winter, this drink helps soothe the throat, warm the body, and support immunity. The longer the petals steep, the stronger and more aromatic the infusion becomes.

Original culinary uses

Fragrant ginger broth: made with a spoonful of powder or a few petals, this light yet powerful broth is perfect for winter.

Light and aromatic soups: dried ginger petals pair beautifully with crunchy vegetables and fresh herbs, creating balanced and fragrant soups.

How to consume ginger powder?

Ginger powder is versatile and easy to use. Its fine texture allows precise dosing and quick incorporation into recipes.

It can:

  • enhance savoury dishes,

  • add a spicy note to desserts,

  • or be used in teas and infusions.

It also works well in spice blends. Mixed with honey, ginger powder becomes a natural remedy often used to soothe sore throats and fight fatigue.

Recommended daily dose of ginger powder

Because it is easy to measure, ginger powder is perfect for everyday cooking.

To benefit from its digestive, energising, and anti-inflammatory effects, it is recommended to consume 1 to 2 grams per day, about half a teaspoon.

Avoid exceeding 4 to 5 grams per day, as this may cause digestive discomfort. Pregnant women, people under medical treatment, or those with specific health conditions should seek medical advice before consuming ginger regularly.

How to store ginger powder?

Store ginger powder in an airtight container, away from light and humidity, to preserve its aroma and benefits. Properly stored, it keeps its flavour for several months.

Winter wellness tip: Mix 1 spoon of ginger powder, 1 spoon of turmeric powder, and ½ spoon of freshly ground Kampot black pepper into a jar of honey. Take a spoonful each morning, plain or stirred into warm milk or tea, for a natural immune boost.
