8 advices to create a dream autumn barbecue

C. “The whispering trees, the serene melody of chirping birds, and the allure of a campfire; the woods have always been a safe place. In this tranquil setting, my passion for cooking truly comes alive, especially when shared with good friends. Whether it’s the crackling of the logs, the fragrant aroma of freshly grilled food, or the refreshing chill of the outdoors, there’s something innately heart-warming about a woodland barbecue. Every time I pack up and return home from these days spent outdoor, I’m reminded of why I cherish these experiences: the fusion of nature, good company, and food truly brings me joy. I always look for more outdoor getaways. “
Why cooking outdoors?
C. “One of the advantages of a campfire is that cooking time is never a pressing issue. Compared to a camping stove, you have the flexibility to choose any cooking method. Day trips in the woods are always fun. You can pack a wide choice of food, whether you have the entire meal ready or wish to cook it from scratch. The key to outdoor cooking is being prepared in advance. Not all locations will have the facilities you’re used to, which is why I always like to plan ahead, especially if hiking is involved!”
What will you need for a cooking trip in the woods?
C. “For this unique cooking experience, we worked with Petromax, a brand specialised in maximising your outdoor experiences. We recomment these ustensils for a great barbecue in the wild:

– 1 to 2 small spoons for transferring food or spreading sauces

C. “Whatever time of the year you are planning to cook on an open-fire, it’s essential to work with seasonal and delicious produces that will wow your guests.
– Figs: A perfect representation of autumn’s bountiful gift. Their sweetness complements the camphor notes of Wild Cardamom.
– Seasonal Vegetables: As we transition into the fall season, root vegetables such as carrots, potatoes, and beets resonate with the earthy ambiance of the woods. Given that our day trip was in early September, we were fortunate to savor the tastes of summer’s last vegetables.
– Chicken & Tofu: A dual-protein choice, ensuring both meat lovers and vegetarians relish the feast, that pair well with Rubs to give them some spicy flavours.”
What spices to use this season?
C. “- Wild Cardamom: The intense and camphorated note of Cardamom, when infused in the waffle batter, adds an unexpected depth of flavour, transporting one deeper into the woods with every bite! It’s a must for this season.
– Campfire Rub: This smoky blend pairs perfectly with grilled dishes, and is a go-to item in my open-air kitchen essentials. Its versatility beautifully complements both meats and plant-based proteins, as well as vegetables.
– For an additional boost of flavour, I often turn to La Plantation’s ready-to-use sauces, which work great with grilled veggies. At the moment, these are my favourites sauces for Autumn:

What to prepare at home before cooking outdoors?
C. “I recommend preparing a bit in advance to make the experience of cooking in nature a little easier. All recipes can be prepared ahead of time.
– Waffles: Prepare you batter at home and store in airtight containers ready to be poured into the waffle maker.
– BBQ Marinade: The marinated can be prepare ahead to soak ingredients and refrigerate them in ziplock bags or containers to enhance the flavours.
Vegetables: Clean, cut, and toss your choice of vegetables in a light coat of oil, Green Pepper Rub, fresh herbs (Iused savory herbs). Store them in containers, ready to be grilled.”
How to cook in the wild?
C. “Set up the Petromax Fire Hanging Bowl on the tripod when the fire reach optimal temperature. Add neutral oil to the fire bowl and grill your marinated chicken, tofu, and vegetables, ensuring they’re cooked evenly.
When using the Petromax Cast Iron Waffle Maker, pour in your batter and cook until your waffles are crisp and golden. Finish by topping them with fresh fig slices and perhaps a drizzle of honey or maple syrup.”
Tips to optimise your outdoor cooking experience
C. “Pre-marinating meats and tofu allows flavors to penetrate deeply. Aim for at least a few hours, but overnight is optimal.
Always maintain a consistent heat source; you can control the heat by raising or lowering the Fire Hanging Bowl.
Keep a small spray bottle of water handy to manage flare-ups while grilling.
Rotate your food for even cooking, and don’t overcrowd the grill area to ensure optimal air circulation.”
