How to use Long Pepper?

Pepper Mill / cheese grater: The simplest method is to grind lightly crushed Red Long Pepper in a pepper mill just before using it, or to grate it over your dishes to add a fresh, spicy flavour.

Infusion : You can infuse Red Long Pepper or Long Pepper Leather in liquids such as milk, cream or stock to add its subtle flavour. For example, heat milk with a few peppercorns to make an interesting base for a béchamel sauce or cream dessert.

Marinades : Red Long Pepper is an excellent addition to meat marinades. Mix it with other spices, olive oil and garlic to create an aromatic marinade. Leave the meat to marinate for a few hours before cooking.

Slow-cooked dishes : Simmered and braised dishes benefit from the deep flavour of Long Pepper. Add a few grains of Long Pepper, or a little Leather, to a stew, curry or braised beef dish for an extra aromatic dimension.

Use with cheese: Long Pepper goes well with certain cheeses, especially fresh cheeses such as goat’s cheese. You can marinate feta cheese with our Fresh Long Pepper with Salt. Its spicy flavour adds complexity to the mildness of the cheese.

Sprinkle on : Long Pepper Pearls are ready to use, and you can simply sprinkle them over your dishes, such as salads, or pieces of meat. We also love adding them to orange carpaccio. Sprinkle freshly ground Red Long Pepper on grilled or roasted vegetables for a zesty, rounded flavour. It works particularly well with root vegetables such as carrots and parsnips.

Crush: Cuir is quite crumbly and soft, so you can crush it with your fingers over your dishes. Don’t hesitate to add it to goat’s cheese sandwiches, tomato salads, fried eggs, meats – in short, it goes well with many dishes – just give it a try!

Cutting: Fresh Long Pepper with Salt is cut on a board with a knife. You can add it to fennel salads, fish ceviches or beef tartars. Its surprising artichoke flavour will add a nice dose of freshness and a salty note. For the more adventurous, it can also be added to chocolate mousse!

In fruit: Ideal for compotes, Red Long Pepper, or the Leather version, adds a warm note to stewed fruit, especially gourmet autumn fruit.

In desserts: Experiment by adding Long Pepper to your desserts. It can add a touch of warmth to sweet dishes such as crème brûlées and panna cottas, and goes perfectly with chocolate.

How should Long Pepper be cooked?

Grilled Fish with Long Pepper and Lime:
– Mix ground Long Pepper, lime zest (or Combava), salt and olive oil to create a marinade.
– Brush this marinade over fish fillets (such as salmon or mahi-mahi) and grill until tender and fragrant.

Long Pepper and Mango Sorbet:
– Prepare a mango purée and add a pinch of ground Long Pepper.
– Use an ice-cream maker to transform this mixture into a refreshing sorbet with an exotic flavour.

Pan-fried pears with Long Pepper and honey:
– Brown sliced pears in a frying pan with butter, honey and a few slivers of Long Pepper Leather.
– The pears will caramelise and take on a delicately spicy flavour.

Grilled chicken with Long Pepper:
– Prepare a marinade by mixing yoghurt, young ginger, garlic, turmeric flower and Long Pepper Pearls.
– Marinate pieces of chicken in this mixture, then grill them for a fragrant and slightly spicy dish.

Hot Chocolate with Long Pepper and Cardamom:
– Add a pinch of ground Long Pepper and ground Wild Cardamom to your hot chocolate mixture.
– This classic winter drink will be enhanced by warm, spicy notes.

Vanilla and Long Pepper Ice Cream:
– Make homemade vanilla ice cream by infusing Leather or Red Long Pepper during preparation.
– The Long Pepper adds an intriguing touch to this sweet ice cream.

Risotto with Long Pepper and Mushrooms:
– Incorporate ground Long Pepper into a creamy mushroom risotto for an earthy, spicy flavour.

Fruit Jam with Long Pepper :
Make a homemade fruit jam by adding pieces of Long Pepper Leather. This sweet and spicy combination is perfect for breakfast toast.

Long Pepper Steak Sauce:
Add Fresh Long Pepper with Salt to a creamy steak sauce. This sauce will enhance the flavour of your grilled meat with a unique spicy and salty touch.

Long Pepper and Chocolate Biscuits:
Incorporate ground Red Long Pepper into a chocolate biscuit recipe. The spicy notes of long pepper will perfectly complement the chocolate for a unique taste experience.

Roast chicken with Long Pepper:
Prepare a roast chicken, adding ground Long Pepper to the butter. The result will be a creamy, fragrant dish.

Long Pepper in Tofu Marinades:
For a vegan option, use Long Pepper in marinades for tofu. The spicy flavours will enhance the neutral texture of the tofu.

Vegetable soup with Long Pepper:
Infuse Long Pepper into your vegetable soup to give it a warming winter flavour. Remove the seeds before blending.

Long Pepper in Caramelised Apples:
Sauté apple slices in butter and sugar and grate in a little Long Pepper. Serve as a dessert or as a garnish for meat dishes, with sausages for a gourmet touch.

Long Pepper in Cocktails:
Use long pepper to flavour cocktails. It can add an exotic touch to drinks such as sangria or mulled wine. Simply infuse a few peppercorns in your wine and leave off the heat for at least 1 hour to allow the aromas to develop.

Bear in mind that Long Pepper has a more subtle, less pungent flavour than Black Kampot Pepper, and is more similar to Red Kampot Pepper, so it can be used with greater freedom. Start with small quantities and adjust according to your taste preferences. This unique spice can add an interesting dimension to a variety of dishes, so don’t hesitate to experiment with it in the cooking this season!
