Product information

This set starts from a simple principle: pepper loses a significant part of its aroma the moment it is ground. That is why it pairs an artisan acacia wood pepper mill with three black peppers that have never been reduced to powder, each preserved whole to protect the volatile oils responsible for their character.

The mill is fitted with a CrushGrind® ceramic grinding mechanism, adjustable from a fine grind to a coarse crack, so the texture can be adapted to whatever is on the plate. The three peppers come from different Cambodian regions, chosen for the contrast in their aromatic profiles rather than a simple variation in heat intensity.

The mill itself is made by Mr. Saroeun, a Cambodian woodworker who has been crafting furniture and kitchen objects since 2004. Each piece is individually carved, shaped and dried, which means no two mills are entirely alike — a quality that makes this set as much a craft object as a culinary tool.

Giving this set is also a way of putting a local artisan’s work into someone’s hands alongside the peppers that fill it.

Artisan wood pepper mill: a hand-carved object with a ceramic grinding mechanism that is adjustable, rust-proof and built to last. The double-sphere silhouette and the density of the acacia wood make it as comfortable on the table as it is practical in the kitchen.

Kampot Black Pepper PGI: grown between the sea and the hills of Kampot province, this pepper carries a Protected Geographical Indication that guarantees its origin and the method of its production. Its aromatic profile is complex and spiced, with subtle notes of chocolate, mint and eucalyptus.

Mondolkiri Black Pepper: from the high plateaus of north-east Cambodia, this pepper expresses a different character from Kampot, shaped by the altitude and the cooler, more contrasted climate of the region. Rounder and earthier in profile, it suits a wide range of everyday dishes.

Smoked Ratanakiri Black Pepper: from the red laterite soils of Ratanakiri, this pepper develops woody, toasted aromas and a distinctive smokiness that sets it clearly apart from the other two. The smoking process adds a layer of depth without masking the pepper’s underlying warmth.

Kampot black pepper PGI pairs naturally with red meat, game and charcuterie. In Italian cooking it is the pepper that structures a cacio e pepe or a risotto, its complexity holds up to strong flavours without disappearing into them.

Mondolkiri black pepper works well with white meat and poultry, but also in tomato-based sauces, with roasted peppers, potatoes and ratatouille, where its rounder profile adds warmth without the assertiveness of Kampot.

Smoked Ratanakiri pepper is the natural choice for oily fish, aged cheeses, fried eggs or a smooth mashed potato. Its smoky character enhances simple preparations without overwhelming them. A few turns of the mill over a finished dish is often enough.

This Cambodian gift set includes an artisan acacia wood pepper mill with a CrushGrind® mechanism along with PGI Kampot, Mondolkiri, and smoked Ratanakiri black peppers (Piper nigrum L.), featuring a 60-month shelf life. Free from allergens, it should be stored in a cool, dry place away from direct light and moisture.

Why does freshly ground pepper taste better than pre-ground?

Pepper contains volatile aromatic compounds terpenes, including pinene and limonene, that begin to dissipate the moment the grain is broken open. Pre-ground pepper sold in a jar has already lost most of these compounds by the time it reaches the kitchen. Grinding whole grains at the moment of use is the only way to capture the full aromatic profile, which is why the three peppers in this set are kept whole until needed.

How does the CrushGrind® mechanism work?

The CrushGrind® is a ceramic grinding system developed by a Danish manufacturer. Unlike steel mechanisms, ceramic does not rust and does not degrade on contact with salt or acidic spices. The grind size is adjusted by turning the mechanism at the base of the head with tighten it for a finer powder, loosen it for a coarser crack. The adjustment is precise and consistent across uses.

What is the difference between the three black peppers in this set?

All three are the same botanical species (Piper nigrum L.), but each is shaped by a distinct Cambodian terroir and, in one case, a specific production method. Kampot black PGI is complex and spiced, with notes of chocolate and eucalyptus. Mondolkiri black is rounder and earthier, suited to everyday cooking. Smoked Ratanakiri black has a woody, toasted character. It is the most distinctive of the three and the one most suited to simple, direct pairings.

How should the peppers be stored once the packaging is opened?

In the mill itself, topped up as needed, or in an airtight, opaque container away from heat, moisture and direct light. Whole grains retain their aroma for up to 60 months from the production date. The mill makes daily use natural, which is the best guarantee of freshness.
