The salt fields of Kampot benefit from privileged meteorological conditions during the dry season from January to April, to produce a natural flower of salt of high quality appreciated by the chefs and the gourmets.

Along the river between the sea and the town of Kampot, the water is channeled and filtered in a succession of ponds. Crystals of Fleur de sel form with heat and evaporation. They float for an ephemeral duration on the surface of the water and are collected with a dedicated tool at a specific time before they sink to the bottom of the basin. Each salt basin produces a tiny amount of Flower of Salt only when it is warm, sunny weather and with very little wind.

Once harvested, Fleur de sel is sun-dried for several days. Kampot Fleur de sel is of a beautiful white color and a fragile crystalline and transparent texture. Kampot Fleur de sel is a 100% natural product, which contains no additives and is not treated after harvest.

La Plantation’s Fleur de Sel de Kampot has recently been awarded the prestigious Protected Geographical Indication (PGI), guaranteeing its authenticity, terroir of origin and traditional production methods. This certification testifies to the exceptional quality of this spice and its inseparable link with the region of Kampot and the neighbouring region of Kep.

The techniques for harvesting and producing “Fleur de sel de Kampot” have been passed down through generations, dating back to the days of the French protectorate. Salt-makers from Guérande, experts in the art of salt-making, helped shape the methods for which the Kep – Kampot region is renowned today. Each grain of salt is the fruit of ancestral know-how, preserved and passed on with love.

These partnerships are based on mutual respect, sustainability and support for local communities.
