The salt fields of Kampot benefit from privileged meteorological conditions during the dry season from January to April, to produce a natural flower of salt of high quality appreciated by the chefs and the gourmets.
Along the river between the sea and the town of Kampot, the water is channeled and filtered in a succession of ponds. Crystals of Flower of Salt form with heat and evaporation. They float for an ephemeral duration on the surface of the water and are collected with a dedicated tool at a specific time before they sink to the bottom of the basin. Each salt basin produces a tiny amount of Flower of Salt only when it is warm, sunny weather and with very little wind.
Once harvested, Flower of Salt is sun-dried for several days. Kampot Flower of Salt is of a beautiful white color and a fragile crystalline and transparent texture. Kampot Flower of Salt is a 100% natural product, which contains no additives and is not treated after harvest.
A few crystals sprinkled on a plate, just before serving, add a visual touch of flavor and crispness. Kampot Flower of Salt is used to flavor your dishes. It does not replace salt during cooking but is added to dishes just before serving. In finish, it will enhance the flavor of eggs, fish, meat, vegetables, chocolate or caramel.
Once the package is opened, we recommend that you keep the Kampot Salt Flower in a closed jar, protected from light and moisture, so that it retains all its flavor and crunchiness.
