Cassia Cinnamon

Preheat the oven to 160°C.
Prepare 7 or 8 apples with an apple peeler, or alternatively, peel and cut the apples into 2-3mm slices. Line a high charlotte mould with baking paper and cover with sliced apples to the top. Sprinkle with Cassia Cinnamon between each layer, every 1cm or so.
Place in the oven for 2 hours. Check for doneness every 30 minutes, pressing down well with a spoon. Serve warm with a little raw cream, yoghurt or as is!
