What is Cassia Cinnamon?

Cassia Cinnamon, scientifically known as Cinnamomum cassia, has its roots in China. It is extracted from the bark of the Cassia Cinnamon tree, also known as Chinese Cinnamon.

 

How is Cassia Cinnamon harvested?

Harvesting Cassia Cinnamon is a labour-intensive process. The outer bark of the Cassia tree is carefully removed to reveal the inner layers, which are then dried and rolled, developing the characteristic sweet and spicy flavour.

Cassia Cinnamon and Ceylon Cinnamon: what are the differences?

Although they belong to the same cinnamon family, Cassia Cinnamon and Ceylon Cinnamon have distinct differences. Cassia Cinnamon, made from thick pieces of bark, has a full-bodied, spicy flavour, while Ceylon Cinnamon, made from thin sticks and originating in Sri Lanka, is distinguished by its delicate aroma.
Cassia Cinnamon is therefore an ideal choice for dishes where a full-bodied, sweet cinnamon flavour is desired; perfect for lovers of this unique flavour.

What are the health benefits of Cassia Cinnamon?

As well as its delicious taste and historical importance, Cassia Cinnamon is said to offer numerous health benefits. It is known for its potential to :

Lower blood sugar levels: There is some speculation that Cassia cinnamon may help to regulate blood sugar levels, making it a valuable addition to dishes for people with diabetes. However, this requires frequent use over time.
Antioxidant and anti-inflammatory properties: This spice is said to be rich in antioxidants, which can protect the body against oxidative stress and inflammation.

How to use Cinnamon in Autumn dishes?

Autumn welcomes new fruits and vegetables that we love to rediscover every year. Here are some creative ways to use this versatile spice:

Cinnamon apples: Apples are abundant in autumn, and they go beautifully with cinnamon. Make homemade applesauce with a pinch of cinnamon for a healthy, soothing snack. You can also use Cinnamon apple slices in pies, crumbles or crisps.

Spiced pumpkin: Pumpkins and squash are the stars of autumn. Combine them with Cinnamon to create cinnamon pumpkin soup, spiced pumpkin pie or even roasted pumpkin fries sprinkled with cinnamon.

Sweet carrots: Available all year round, carrots are particularly sweet in autumn. Season them with a little Cinnamon for a delicious and original variation. They can be roasted or steamed, then sprinkled with cinnamon and honey.

Fig compote or jam: Prepare homemade compotes and jams using autumn fruits like figs, and add Cinnamon: a delicious combination.
