As the sun shines brighter and the temperatures rise, there’s no denying that summer is in full swing. It’s the season of vibrant colors, outdoor gatherings, and, of course, delightful culinary adventures. When it comes to capturing the essence of summer on your plate, few flavors can rival the bright and invigorating taste of citrus.

In this blog post, we invite you to embark on a mouthwatering journey through the world of citrusy flavors. Whether you’re hosting a backyard barbecue, planning a picnic in the park, or simply looking for a way to beat the heat, we’ll explore a variety of recipes that showcase the versatility and vibrancy of citrus flavours. Our Citrus Mix

This iconic lemon-flavoured blend is one of our very first creations. You love it, and it’s always been our best-selling summer blend!
In fact, it goes particularly well with the foods we’re lucky enough to eat when we spend our summer holidays near water: fish, seafood and shellfish. Instead of, or to complement, a drizzle of fresh lemon juice, you can sprinkle a little Lemon Blend over a fillet of fish steamed, baked or barbecued, or raw, as a tartare. This ready-to-use blend, which includes Fleur de Sel and Kampot Pepper, will add a lovely touch of original flavour in an instant!

Kaffir Lime Zests

Intense and instantly recognisable, Kaffir Lime Zest is for citrus lovers! They will also add a slight touch of bitterness, ideal for boosting milder foods such as dairy products, fresh cheeses and raw fish. Our two favourite recipes for summer: ricotta with mango, and white fish ceviche. Delicious and very easy to prepare, you’re sure to impress your guests!

Kaffir Lime Leaves

More delicate, Kaffir Lime leave are an essential ingredient in Asian cuisine, and will immediately transport you to the Mekong region. It’s the main ingredient in our Lemon Blend, so if you already enjoy it, this pure version of Combava will allow you to combine it with fruit salads, especially strawberries and raspberries, as well as melon and watermelon. Simply sprinkle some directly into your salad bowl. You can also add it to salads, grilled meats and, why not, fresh scallops.

Lemongrass: Stalks and Infusion

Lemongrass is well known for its use in winter, but we love discovering this plant with a thousand benefits in summer recipes, in particular by adding a little Lemongrass Stem Powder to our salad dressings. You can also add it to your shrimp marinades, or even to a pan-fried apricot with butter.

If you prefer, or already have at home, a herbal tea version of Lemongrass Leaves, you can infuse it in a jug of slightly hot water in the morning for around thirty minutes, before cooling it and placing it in the fridge for a few hours. It’s a real bowl of freshness that can be drunk all day long, and could help your digestion. It’s ideal for a little detox between two over-indulgent aperitifs!

And also: Green Mango

Have you already tried one of our latest additions: the Green Mango? Also known as ‘Amchoor’, this is a mango powder that is harvested green, when it is still young. It’s a completely different way of discovering mango, which you may be familiar with from our Spicy Sauce : Mango Spicy, or in a Dried version with Kampot Pepper. Our Amchoor adds a lovely tangy touch without the need to add moisture (like lemon juice), so it’s ideal for a wide range of cake batters, such as choux pastries! You can also add it to crumbles, clafoutis and rice puddings. And when it comes to savoury dishes, we love making our own tangy butter!

Hibiscus: powder or infusion

And finally, we’d like to introduce you to our Hibiscus, which you’ve loved from the moment it arrived! It’s available in herbal teas, where the chalice of the hibiscus flower is still whole, for a ‘wow’ effect in your iced infusion. We also love making ice cubes with a chalice in the middle, and you can also prepare a syrup for your cocktails! Our powdered version offers subtle colouring and a tangy touch to your sweet recipes, such as ice creams, crèmes chantilly, panna cotta, crème brûlée and even meringue!
