What is cashew nuts?

Cashews stand out in the nut family due to their unique shape and sweet, buttery flavour. Delicious as they are, they can be enjoyed straight out of the bag. Unlike hazelnuts or walnuts, they do not have a bitter, unpleasant shell.

Originally from Brazil and introduced to Southeast Asia in the 16th century, cashews are now widely cultivated in Cambodia, renowned for the superior quality of its harvests. Cashews are also notable for their culinary versatility, as they can be consumed raw, roasted, or incorporated into various dishes and desserts. This not only enhances recipes but also contributes to daily nutritional balance.

Recipes Honouring Cambodian Cashews

Cambodian cashews are particularly prized in Cambodia and throughout Southeast Asia, where they are ubiquitous as a snack and on restaurant tables. Traditionally, they are enjoyed as an aperitif, often stir-fried in oil with chilli and Kaffir lime leaves, and generously seasoned with salt for an intense and spicy flavour. Inspired by this rich culinary tradition, we aimed to recreate these authentic flavours in a new range of cashews, but with a healthier and more contemporary approach.

Our cashew range is crafted without added oil and with a low salt content, preserving their natural character and exceptional freshness. Each cashew is carefully selected and prepared to capture the essence of its Cambodian origin. This deliberate choice allows us to offer you a pure and balanced taste experience while maintaining the unique aromas and texture of the cashew.

What Does “WW240 Cashew” Mean?

A WW240 cashew refers to its specific size and quality. The term “WW240” indicates that there are approximately 240 cashews in a pound (450 grams). This classification denotes a particularly large and sought-after size in the market. WW240 cashews are considered rare and are often preferred for their generous shape and creamy texture. Their rigorous selection guarantees superior quality, making them an ideal choice for those who appreciate top-tier cashews in their recipes or simply as a delicious snack.

Roasted Cashews

Our three spiced cashew varieties are each roasted and seasoned with different spice blends, offering a unique and authentic taste experience.

Through a meticulous roasting process, the cashews are heated at a controlled temperature, releasing their rich aromas and slightly sweet notes. This artisanal method preserves their quality while ensuring an exceptional taste experience.

 

Spicy cashews made with acacia gum

Thanks to a light addition of acacia gum, we ensure a uniform distribution of spices on each cashew, guaranteeing a consistent and deliciously spicy taste experience. The natural acacia fibre acts as a natural binding agent, allowing the spices to blend harmoniously with the cashew for a rich and balanced flavour in every bite.

Acacia gum, also known as gum arabic, is a natural resin extracted from the Acacia senegal tree and other acacia species. It is mainly composed of polysaccharides and glycoproteins, which give it thickening, emulsifying, and stabilising properties. Acacia gum is water-soluble and forms viscous solutions used in various food, pharmaceutical, and cosmetic industries. It is often used as a food additive to stabilise emulsions, improve the texture of food products, and as a coating agent for candies and dried fruits. Moreover, acacia gum is recognised for its prebiotic properties, promoting the growth of good bacteria in the intestinal tract, which can have beneficial effects on digestive health.

Smoked Cambodian Cashews

The subtly smoked flavour of these cashews is achieved through an artisanal smoking method using our Cambodian paprika and Kampot pepper, which imparts an inimitable aromatic depth, slightly enhanced with a touch of dried garlic and salt to balance the flavours. If you’re already familiar with our Smoked Blend, a bestseller for many years, you’ll love these smoked cashews!

Cambodian Cashews with Kampot White Pepper and Salt

This pepper and salt mix provides the cashew with the unique taste of the renowned Kampot White Pepper and our Kampot Salt, both internationally recognised with Protected Geographical Indication (PGI) status. Kampot White Pepper is one of the few peppers in the world produced from red berries picked at full maturity, developing a subtle aroma with notes of citrus and eucalyptus. We add a hint of Kampot Salt to balance the flavours and natural acacia gum to bind the spices to the cashew. Finally, a touch of Palm Sugar is added to meld the aromas together. Palm Sugar, also PGI recognised, is entirely natural and unrefined, making it an ideal alternative to white or brown sugars due to its low glycaemic index (below 30). Its unique flavour of caramel, honey, and gingerbread is highly appreciated.

Cambodian Cashews with Galangal and Turmeric

This is an original blend of two Cambodian roots, known for their health benefits and unique flavours, which we have chosen to highlight with cashews infused with galangal and turmeric. Galangal combines notes of lemon, ginger, and pepper. This flavour, reminiscent of mustard, is both slightly spicy and slightly citrusy, making it an aromatic and exotic spice. Turmeric adds roundness with a warm saffron touch and a beautiful orange colour..
