The fruits of Long Pepper are harvested by hand at full maturity. They are then cleaned and sun-dried in strips, to obtain naturally crisp and spicy chips.
Our Long Pepper leather is a unique way to discover Long Pepper! The originality of this spice has surprised even the most discerning gourmets. Long Pepper leather has a very sweet attack, giving the impression of tasting caramel or CarambarTM.
Then, in the mouth, the aromatic strength of long pepper is revealed with warm, spicy notes of gingerbread or speculoos. A real surprise for pepper lovers, who will be amazed by the unique aromas of long pepper leather.
Long Java pepper leather is very versatile, and makes it possible to discover long peppercorns in both savoury and sweet preparations!
All you have to do is crush it directly with your finger. If your chips are a little harder or thicker, you can cut them finely with a knife, or even crush them in our traditional wood Mortar. Our long pepper leather can then be sprinkled on a multitude of dishes:
Here are a few ideas for using Long Pepper leather simply and deliciously, but as always, feel free to experiment in the kitchen!
- It’s a delicious spice for carpaccio, confit or duck breast, where its sweet flavour and strength will counterbalance the richness of the duck or other fattier poultry.
- In a shrimp salad, it will add a powerful flavour. It goes particularly well with citrus fruit, so don’t hesitate to add some to your salad!
- More surprisingly, it can be added to a chocolate fondant to impress your guests. We love adding a little Kampot fleur de Sel to intensify the flavours even more!
You can also infuse it into longer-cooking dishes, such as :
- You can use the long pepper leather in vegetable broth that comes to give a lot of benefits during the winter. Long Pepper is known for its many benefits and is a great ally during the coldest weeks.
- It can also be used to make onion jam or quince confit, which go very well with duck, foie gras, rillettes and other winter delicacies.
To store Long Pepper leather properly, keep it in a cool, dry place to protect it from light. We recommend that you keep the strips of long pepper, our “leather”, whole in a jar.
You can pour them into the 50-gram kraft tube, which is food-safe. Or into a glass jar. If you opt for a glass jar, be sure to store it in a cupboard if your kitchen is exposed to light!
