About us

Red long pepper, in its ready-to-use

powder form

Red long pepper (Piper retrofactum) is a rare spice originally from Java, Indonesia, which has perfectly adapted to the fertile terroir of Kampot, Cambodia.

This flowering vine produces elongated pepper spikes, harvested when fully ripe and deep red.

How is red long pepper harvested?

Harvesting is done by hand, with selective picking to ensure only fully ripe fruits are chosen. After collection, the spikes are washed, briefly blanched, and sun-dried for several days to preserve their natural aromas.

Unlike salt-fermented long pepper, red long pepper powder is collected at a later stage of maturity, offering a rounder, warmer and more aromatic flavour. It is a truly artisanal ground pepper, appreciated for its authenticity and intensity.

At La Plantation, dried red long pepper is finely ground and packed immediately into airtight sachets, preserving its full flavour profile and the pepper’s organoleptic qualities.

Did you know? Red long pepper comes from the same vine as fresh green long pepper used for salted long pepper, but it is harvested when fully ripe.

Why do we offer red long pepper in powder form? Whole long pepper is valued for its aromas but can be difficult to use: it needs to be grated, crushed, or placed in a mill. The powdered version makes it convenient and ready-to-use — simply sprinkle over your dishes.

This rare spice develops a unique aromatic palette.

  • Warm, sweet notes reminiscent of caramel and cinnamon.

  • A moderate yet persistent heat.

  • Complex layers combining spiced nuances with subtle floral touches.

Its versatility makes it suitable for both sweet and savoury recipes, from everyday dishes to creative gourmet cooking.

Java long pepper blends beautifully into a wide variety of recipes:

  • Flavours curries, stews, sauces, marinades, and rice-based dishes.

  • Pairs perfectly with white meats, poultry, game, and even some fish.

  • Enhances compotes, jams, biscuits, or hot chocolate with an original twist.

  • Can be infused in olive oil or vinegar for a delicate aromatic touch.

Recommended dosage

Start with a small quantity and adjust to taste.

The powder integrates quickly and evenly into recipes, and can also be added at the end of cooking to preserve its finesse.

Beyond its culinary appeal, red long pepper has long been valued for its health benefits:

Digestive support

  • Stimulates saliva and gastric secretions, aiding smoother digestion.

Anti-inflammatory properties

  • Traditionally used to help ease certain inflammatory conditions.

Immune system support

  • Its natural phytonutrients may help strengthen the body’s defences.

Antioxidant power

  • Rich in flavonoids, it helps neutralise free radicals and protect cells against oxidative stress.

In Asian traditional medicine, red long pepper is also considered a warming spice that stimulates circulation and revitalises the body.

What can replace red long pepper powder? You can substitute with freshly grated whole red long pepper or dried long pepper leather. Both alternatives preserve the sweet, spicy aromas of Java long pepper.

Where can I buy red long pepper? Choose short supply chains that guarantee product traceability. At La Plantation, we produce fair trade spices directly in Cambodia. You can order red long pepper powder on our website or find it in our partner shops across France.

How should I store red long pepper powder? Keep it in an airtight container, away from light, air, and humidity. A closed glass jar stored in a dry cupboard is ideal to preserve its aromas for several months.
