Smoked fleur de sel is a delicate variation of fleur de sel, harvested from the salt marshes of Kampot, Cambodia.
Formed under unique climatic conditions and produced through centuries-old artisanal know-how, it stands out for its purity and authentic taste.
What is fleur de sel?
Fleur de sel forms naturally on the surface of salt pans when the sun and wind create a fine layer of crystals.
This fragile layer is carefully collected by hand using a traditional wooden rake. Unlike regular sea salt, which crystallises at the bottom of the basins into larger, drier grains, fleur de sel remains floating on the surface.
Harvesting requires skill and patience. Sauniers (salt workers) delicately skim off the crystals without mixing the layers beneath. It is usually collected in small quantities in the late afternoon, when crystallisation is optimal.
After harvesting, Kampot fleur de sel is sun-dried for several days. It is naturally bright white, with a fine, delicate crystalline texture.
