Our “Winter Flavours” box contains spices freshly harvested from our Farm, as well as unique creations that we have concocted for you at La Plantation:
- Our fresh red Kampot pepper with IGP salt. An exclusive creation from La Plantation, Fresh Red Kampot Pepper with Salt is made from red peppercorns picked when fully ripe.
- Our long pepper leather. The long peppercorns are harvested by hand when fully ripe. They are then dehydrated at low temperature, spread out in sheets, to obtain a naturally spicy leather. This long pepper leather is very sweet on the attack, and gives the impression of eating a caramel or a Carambar, but spicy.
- Our young ginger. The ginger is harvested while still young and full of juice. The rhizomes are peeled and dried immediately at a low temperature to preserve all their aromas. Young ginger develops exceptional freshness and aromatic richness.
- Our tamarind cinnamon sauce. This sweet sauce offers a perfect balance between the sweet notes of cinnamon and the tangy flavour of tamarind.

HERE ARE SOME WAYS TO USE SPICES THIS SEASON:
- The grains of fresh red Kampot pepper with fleur de sel can be used directly by sprinkling them over your dishes, such as gravlax salmon, foie gras, or even poultry and cheeses.
- Long pepper leather is crushed by hand, using a knife or mortar. It can be used as is, on your dishes, or added to slow-cooked, simmered dishes. It goes particularly well with onion chutney, jams such as fig or quince, foie gras, but also in meat juices, roast poultry such as duck breast or cannette, and even in a classic beef Wellington.
- For young ginger. Add a subtle touch to your Christmas cakes and shortbread, where its exotic fragrance blends elegantly with sweet notes. Our young ginger enhances the delicacy of seafood. In your comforting broths, its fresh, invigorating flavours create an incomparable aromatic base.
