Cut the grapefruit in half and remove the segments with a knife.
Sprinkle the sugar evenly over the surface. Brown the surface with a blowtorch until lightly caramelised.
Crush the Dehydrated Green Kampong Thom Pepper using a mortar, and scatter over the grapefruit.
