In a bowl, pour all the chai pudding ingredients and mix with a whisk.
Leave in the fridge for a few hours. Stir again. If the texture is not to your liking, add a spoonful or two of yoghurt.
Cut the rhubarb stalks into pieces, remove the ends, and add them to a saucepan. Hull the strawberries and cut them in half and add them to the pan. Pour in the lemon juice, honey and White Turmeric and cook over low heat until you have a compote. About 10-15 minutes.
Serve the chia with the strawberry-rhubarb compote, Combava leaves and some toasted hazelnuts.
