Cut the courgettes into thin strips. Add lemon juice, mint and Flower of Kampot Salt. Mix well. Chill for 5 to 10 minutes. Add the seeds, dried cranberries, a drizzle of olive oil, Kampot Black Pepper and Ginger Papaya Sauce.
