Sage Leaves or Curry Leaves

Extra virgin olive oil
Cut the feta cheese into small cubes. Place in an airtight jar or container. Scald the sage leaves for one minute, then add to the jar. If you prefer to use our Curry Leaves, add directly to the jar. Then add the Provençal herbs and the Fresh Long Salt Pepper. Add the olive oil until it covers the feta cubes so that they can marinate.
Mix and keep in the fridge for a few days to allow the flavours to develop. The marinated feta can be stored for a few weeks.
