Kampot long pepper, ‘Piper retrofactum’, is a flowering vine in the pepper family, native to Java in Indonesia.
To produce our long pepper pearls, we harvest the fruit when it is fully ripe. Pepper Pearls are tiny peppercorns, about the size of a poppy seed. They are found under the outer shell of the long pepper, which closely resembles a hazelnut catkin.
Our workers carefully remove the tiny peppercorns from the red fruit. They are then washed and dried in the sun for several days.
Long Pepper pearls have distinct and unique aromas that set them apart from other varieties of pepper, particularly Kampot Pepper. As the seeds of Long Pepper, our pearls will surprise you with their intense flavour.
Aniseed and menthol notes stand out on the nose. On the palate, the first impression is mild, with the spiciness coming later.
- Long peppercorns are often described as having citrus notes, particularly lemon. This lemony note adds freshness and liveliness to the flavour.
- Long peppercorns can also have floral nuances, sometimes reminiscent of lavender or violet. This adds a delicate dimension to its aromatic profile.
- Although less intense than black pepper, long pepper still has a distinctive spicy note.
Long Pepper pearls are a unique way to discover a new variety of pepper, Long Pepper, and are very easy to cook with because they’re ready to use! They can simply be added just before serving.
For example, we often sprinkle pearls of long pepper on :
- They’ll add a unique flavour to winter salads, with nuts, goat’s cheese or squash. Or in summer, on sautΓ©ed courgettes served as a salad.
- For an original aperitif, add long peppercorns to cold meats such as rillettes or pΓ’tΓ© to give a light touch to fat-rich dishes.
- You can add pearls of Long Pepper to fresh goat’s cheeses, or even creamy cheeses that are roasted in winter.
- Raw, on a carpaccio or tartare, or on a nice piece of cooked red meat, such as beef or even game, which goes particularly well with long pepper.
- Add a few pearls of Long Pepper to stewed red fruit or winter fruit such as pears or apples.
Long Pepper pearls are very practical to use, and the important thing is to dare to associate them with your favourite dishes. You’ll be surprised and convinced your guests by finding your own way to enjoy our Long Pepper pearls.
Once you have opened the packet, it is best to store the pearls in a cool, dry place. The pearls can be poured out of their protective bag directly into the 50g kraft tube, which will protect them from light and humidity. In this way, the Long Pepper Pearls will retain all their unique flavour and aroma.
Our tip: the tubes are stackable, so feel free to replicate your favourite spice shop at home by stacking the spices!
