Preheat the oven to 200°C.
Bring a pan of salted water to the boil.
Cook the soba noodles according to the packet instructions. Drain and cool in cold water. Transfer to a large bowl.
Place the peanuts on a baking tray and brown in the oven for 5 minutes.
Mix all the ingredients for the spicy sauce with Smoked Chili and set aside. Next, chop the coriander and mint leaves and mix with the soba noodles. Add half the spicy sauce and mix well.
Cut the carrots into sticks. Remove all the stalks and leaves from the broccoli and cut the snow peas lengthways. Add to the noodles along with a few spring onions.
Add a few blueberries and blackberries. Garnish with roasted peanuts and the rest of the spicy sauce and lime cut into quarters.
