Spice up your pancakes for La Chandeleur (Candlemas)
This February, Candlemas is upon us, marking a culinary festival enjoyed by young and old alike. Now’s the time to celebrate this age-old tradition with a touch of originality, using our exceptional quality spices. Turn your crêpes into an unforgettable spicy experience and enjoy an extraordinary Chandeleur.
La chandeleur (Candlemas): Tradition and delicacies
Chandeleur (Candlemas), celebrated on 2 February, was originally a religious festival. Over the centuries, however, it has become synonymous with conviviality, sharing and, of course, indulgence. The French get together as a family to make and eat pancakes, symbols of prosperity, and more specifically to have fun blowing them up while holding a gold coin, supposed to bring luck and fortune for the coming year.
Chandeleur is not just a time for making crêpes, it’s also a time for getting together, bonding and sharing joy around the table. Although the basic recipe for crêpes is simple, each family has its own secrets, preferences and favourite toppings. It’s a tribute to our beautiful regions of France, like Brittany, famous for their crêpes: thick or thin, but always well buttered!
International crepes
Pancakes may be at the heart of Chandeleur in France, but other countries have their own delights to share throughout the year. One exquisite example comes from our region of Cambodia, where ‘num banh chok’ is a delicacy of choice. These are thin rice pancakes, generously topped with a tasty peanut sauce, fresh fish, crunchy vegetables and aromatic herbs. This combination of textures and flavours is a real explosion of flavour, well worth discovering to broaden your culinary horizons.

Our Chai Mix is an explosion of flavours. It combines the sweetness of Cinnamon, the freshness of Cardamom, the spiciness of Ginger and a hint of Turmeric and Kampot Pepper. Add a pinch of this mix to your pancake batter for an enchanting fragrance that will enchant your senses.
- Wild Ginger Powder
Wild ginger is an exceptionally fragrant spice. It will bring a spicy and exotic note to your pancakes. Sprinkle it in the batter or when heating your crêpe, its powerful, refined aroma will make all the difference.
- Hibiscus Powder
For a touch of colour and tangy flavour, hibiscus powder is a wise choice. It will add a floral and fruity note to your pancakes, as well as a beautiful pink hue. A real treat for the eyes and the taste buds.
- Amchoor Green Mango Powder
Highly prized in India, this Amchoor Green Mango powder, direct from our farm in Kampot, adds a subtle, refreshing acidity to your dishes. Perfect for balancing flavours, it goes wonderfully well with sweet or savoury garnishes.
- Star Anise
Star Anise is an intriguing spice that adds a subtle aniseed flavour and a touch of the exotic to your pancakes. It can be infused into a fruit compote to garnish your crêpes, or added to the batter for a unique taste experience.
- Tamarind Cinnamon Sauce
This surprising sauce perfectly combines the acidity of tamarind with the sweetness of cinnamon. It will add a surprising touch to your crêpes, ideal for a ready-made topping!
- Wild Cardamoms Duo Sauce
The combination of our two wild cardamoms from Cambodia in this sauce offers a unique taste experience. It will add a delicious minty and slightly smoky note to your pancakes. Use it as an accompaniment sauce directly on your pancakes. It goes very well with fats such as crème fraiche or yoghurt.
